A delicious and fresh summer salad. Sweet orange tomatoes and basil is a wonderful pair. The feta adds a nice creamy tang, the toasted almonds a nutty bite and the caramelized onions some more sweetness. Balsamic vinaigrette pulls everything together.
1. In a large pan, heat olive oil over medium heat. Add onion slices and sugar (optional). Stir and reduce heat to low. Cook uncovered for 30 to 45 minutes until soft and golden, stirring every so often. Remove from pan and cool completely. You can chop the onions into smaller bites now, if desired.
2. When the onions are cooking, toast the almonds in a dry pan (in a single layer) over medium-low heat until golden and fragrant, about 10 minutes. Cool completely.
3. In a large bowl toss the lettuce with dressing, adding just enough dressing to lightly coat the leaves.
4. Throw the caramelized onion, toasted almonds, tomatoes, basil and feta into the salad bowl and toss to combine. Season with fresh ground black pepper to taste.
