1. Make Red Wine Vinaigrette.*
Whisk together the vinegar, shallot, salt, and pepper. Slowly add the olive oil, whisking, until the dressing thickens.
2. Make the White Bean Salad.**
(Makes 1-pint)
Place the red onion in a bowl with the olive oil, vinegar, and lemon juice. Add the cannellini beans, parsley, Rosemary,
thyme, and salt & pepper to taste. Toss together to add to the Mason jar salad, or enjoy on its own.
3. Layer the ingredients in the Mason jar, starting with the vinaigrette and then adding the bean salad, followed by the
tomatoes. Fill the rest of the jar with the salad greens. Seal and refrigerate until ready to use.
4. Pour into bowl to serve.
