Chef Frank Bonanno's Lobster Mac N Cheese
Boil lobsters, remove to ice bath. When cool, remove meat, refrigerate. (Save shells and other parts to make seafood stock) For beurre blanc: reduce white wine, vinegar, shallot, peppercorns until au sec. Whisk in cream, reduce 2/3. Whisk in cold butter, ~1.5 oz at a time. Strain through fine mesh, hold warm until use (thermos works well for this, or bain marie).
For service: Melt some butter and add chilled lobster, when warm add mascarpone and allow to melt, stirring constantly. Add cooked macaroni to warm through. Add beurre blanc to create desired sauce consistency. Season with salt and white pepper.
