Light and fresh summer pasta salad
Cook and drain the pasta. Run cold water through to cool or refrigerate for 30 min. Mix the first 7 ingredients together in large bowl. Combine remaining ingredients (besides tomato) in small bowl to make the dressing. Add tomato to large bowl and pour dressing over all. Gently combine with large spoon.
Add the olives, pepperoni, scallions, and peppers to taste. I usually only use 1/2 a jar of olives as I'm not a huge fan whereas I add lots of pepperoni for my husband.
