Found this recipe years ago and modified it a bit. Makes the most delicious moist mocha cake- everyone raves about it. Great chilled. Very rich so serve thin slices. C. Carter-Snell
Cake:
Cool coffee (can use instant espresso or Starbucks coffee powder with water rather than brewed coffee if desired). Melt the 3 oz portion of dark chocolate in microwave (30 sec at a time,stir and repeat until melted). Cool chocolate slightly.
Mix two flours and baking soda. In large bowl beat eggs, sugar and vanilla until light and fluffy. Blend in the 1 cup of mayonnaise. Add flour/soda alternately with 1 1/2 cups coffee into the egg/sugar mix with hand/electric mixer.
Grease and flour two 9 inch layer cake pans, line with wax paper. Pour in cake mix. Bake at 350 F for 35 minutes or until toothpick comes out clean. Cool pans 10 minutes then remove from pans onto cooling racks.
Frosting:
Melt 4 oz chocolate in microwave as above. Blend into milk and 1/4 cup coffee (or coffee powder with 1/4 cup water). Blend mix until smooth then cool.
Cream butter and sugar with electric mixer in bowl until light and fluffy. Add 1 tbsp mayonnaise and beat on high for 1 minute. Add cooled chocolate mixture to butter/sugar and blend well.
Cake Assembly:
Cut each layer horizontally (makes 4 layers total). Spread each layer with 3/4 cup of frosting. Then use remaining frosting for sides/top of cake. Cool cake in fridge. Serve.
(keeps well in fridge- can be frozen up to two weeks).
Calories: 450/slice, 20 g fat, 4 g protein, 68 g carbohydrate, 2 g fiber, 371 mg sodium.
1 oz chocolate= 1 square Baker's chocolate. Prefer with Purdy's dark chocolate weighed to match. Can also sprinkle Ghiardelli dark chocolate shavings on top of cake.
