Mix sugar, cocoa powder, coffee, cinnamon and butter. Set aside.
Mix sugar, butter, milk, and vanilla. Mix flour, baking powder and salt. Combine mixes. Beat egg whites until peaks form. Fold egg whites into batter. Layer batter with mocha mix. Use knife to swirl. Bake 1 hour at 350* or until golden and toothpick comes out clean.
