Start by laying down 6 bacon slices (you can do this on a sushi rolling mat or cellophane to make things easier).
Put the minced beef in a bowl and season with your favorite BBQ rub. Mix well, then apply a thin layer of seasoned beef on the bacon.
Place a cheese stick on the meat, and roll it up tightly.
Place the roll(s) over indirect heat on your smoker.
The smoker should be preheated to 356°F. Close the lid and cook for 25 minutes.When 25 minutes have passed, open the lid and glaze with the BBQ sauce of your choice.
Cook for an additional 10 minutes, glazing every 5 minutes.
When ready, pull the rolls off the smoker and immediately coat with either crumbled nachos or roasted onions (or a combo of both!)
