1. Heat sugar and water to make a simple syrup
2. When simple syrup has cooled, combine with 3/4 of the mint leaves in a blender. Strain out chopped leaves
3. Combine Rum, mint simple syrup, lime juice into a container.
4. Serve in glass with ice, 50% mix, 50% Club Soda. Garnish with remaining Mint leaves
For larger batches, either reduce simple syrup, or increase lime juice
