Mojito, cocktail
Heat water and sugar to make a simple syrup, then cool. Combine lime zest and sea salt on a plate, wet rim of glass and turn glass rim in salt. Muddle (smash) mint leaves and rum with a wooden spoon to bruise the mint and flavor the rum. Combine simple syrup, rum, lime juice and soda water. Stir and pour into glass over ice.
