Goes great with the Mojo Pork with Black Beans and rice as a great left over use for the meat. However, it can be done individually.
In a crock pot, add the pork and mojo marinade. Add water to until about 3/4 of the pork is submerged in the liquid. Turn on low and cook all day. It is done when you can pull it apart with forks. (If you are using the pork from Black Beans and rice, this entire step should be completed).
In a small bowl, add the Cumin, Coriander, Salt, Pepper, cayenne pepper, cinnamon, chili powerder, paprika, and brown sugar, and mix well. Set aside.
In a large pan, heat the old on medium heat. Once hot, add the garlic and onions and cook until the onions start to sweat. Then add the peppers and mushroom and cook for about 8-10 minutes stirring occasionally. Add in the pork and spice mixture and mix thoroughly. Add enough water to cover the bottom of the pan, lower the heat to medium low, and cover. Cook for 5 minutes, or until vegetables have reached desired doneness.
Serve hot with sour cream, cheese, and tortillas on the side. Cabbage makes a nice addition to this meal as well, as does lettuce.
