Baked pie crust, - cooled.
Chocolate filling:
Melt chocolate and butter (or margarine) in sauce pan, over very low heat, stirring often to avoid clumping or browning. OR cook over double boiler.
Mix flour, 1 cup sugar and salt together and stir in to chocolate mixture (after chocolate is completely melted).
Add milk slowly, stir constantly until mixture if fully thickened, about 15minutes.
Beat egg yolks in small bowl. Stir a little of the chocolate mix in to eggs and blend. Add to chocolate mixture, stir thoroughly, bring to boil stirring occasionally. Cook another 2 minutes. Remover from heat, cool. Add vanilla, pour in to baked pie shell.
Meringue:
Beat egg whites on high setting in small bowl. Add 1/3 cup sugar slowly during process. Beat until stiff peaks form. Add 1 teaspoon vanilla and 1/4 teaspoon cream of tartar.. Pour over chocolate, making sure to seal the edges. Bake at 350 degrees, 15 minutes or until meringue is golden brown.
Cool and serve.
