Preheat oven to 350 degrees F.
In a large pan cook bacon until crispy, remove and crumble. In the same pan with the bacon grease, cook the onions, garlic, celery, and scallions, over medium heat, for about 5 minutes, until the onions soften. Remove from heat, mix in the salt, pepper, Liquid Smoke, honey mustard, Worcestershire sauce, ketchup, and goats milk, and let cool to room temperature.
In a large bowl, combine the meat, vegetable mixture, eggs, and breadcrumbs. Watch the consistency. You want a nice firm loaf that holds it's shape, but is not too dry. To dry your loaf, add more crackers. To moisten, add more goats milk. Form into a loaf-shape, about 4-inches high, and put into a meatloaf pan.
Mix the molasses, brown sugar, ketchup in a small bowl and spread evenly over 1/2 the meatloaf.
Bake the meatloaf in oven for 1 hour, or until the internal temperature reaches 170 degrees F.
Let rest for 15 minutes before serving
