Add all dry spices and cook until you smell them to release their oils. This takes about one minute. Add all liquid ingredients except means. Stir well and simmer for one hour then taste and adjust. Repeat after one 2 hour. Continue to summer for about four hours depending on your cooking method. Then add beans and cook for one more hour.
If you are using a good stock pot you can cook it in the oven and pretty much ignore it. Use the pot to brown the meat and just add everything to it. This is like the big red heavy pan I have. Cook it in the oven on 350 for about 2 to 3 hours. Add beans for the last hour.
If using a crockpot cook it on low for about eight hours.
If using a pan on the stove you’ll have to stir it every 15 minutes or it will burn and make sure you have it on low.
