The best cornbread dressing :)
Prepare cornbread following recipe except; use 1/2 the sugar, twice the salt, 1/2 the baking powder use bacon drippings instead of shortening and add one extra egg. Add celery & onion. Bake
When cool crumble and add poultry seasoning, rubbed sage, butter, well beaten egg & giblet drippings.
Put in baking dish and cover - bake at 350 for 30 minutes, remove foil and bake additional 15 minutes.
Gibblets - (gizzards & hearts)
Simmer in pot of water with bay leaves for 1 1/2 to 2 hours. Add neck after 45 minutes.
Cool on plate, put liquid in the fridge.
