Suggest a better descriptionCream butter and flour. Roll out between two sheets of waxed paper to a 12x6" rectangle. Chill for one hour.
Soften yeast in warm water. Heat 3/4 cup milk, sugar and salt until sugar dissolves. Cool to lukewarm; turn into mixing bowl. Add softened yeast and egg; beat well. Stir in 2 cups flour; beat well. Stir in remaining flour, as much as you can mix with a spooon. Turn onto floured surface. Knead in enough additional flour to make a moderately soft dough. Knead an additional 3-5 minutes. Cover and let rest 10 minutes.
Roll to a 14" square. Place the chilled butter on one half; fold over and seal edges. Roll to a 12x21" rectangle. Fold into thirds; seal edges. Repeat this rolling and folding another 2-3 times, incorporating the butter layer. If the butter becomes sticky, refrigerate until firm. Chill final dough for several hours or overnight.
Cut the dough into fourths. Roll each piece into a 12" circle, and cut into 12 wedges. Roll up each wedge, starting on the wide side, tucking the point underneath the roll. Place on ungreased baking sheet, with the point down. Curve the ends slightly. Cover and let rise for 30-45 minutes. Heat oven to 375 degrees. Beat egg yolk and 1 tablespoon of milk, brushing on rolls just before baking. Bake for 12-15 minutes. Remove to a cooling rack.
