1lb Peeled, cleaned Shrimp (abt 20-24 ct)
4 Hard Boiled Eggs, sliced
Scallions, diced, for topping.
VEGETABLES
1 Lg onion, quartered & sliced.
1 Tray White Mushrooms, quartered.
3 Cloves Garlic, minced.
Dry saute mushrooms for 5-7 mins, covered. Uncover.
Add onions & garlic, plus 1 tbs unsalted butter, S&P to taste, and 1 Tbs S&B Curry powder. Saute until translucent. Set aside.
SAUCE
Roux (4 Tbs each flour & butter) - Light toast.
1/4C S&B Curry Powder - toasted in roux
Add 2C Chicken Stock, whisk until creamy.
Add 1 Pint Whipping Cream, whisk smooth.
Add 1 Can full fat Coconut Milk, whisk smooth.
Season with S&P to taste.
Heat through.
ASSEMBLE
Add sauteed vegetables to sauce.
Add sliced eggs and shrimp to sauce.
Bring to a low simmer until shrimp are cooked.
Serve over fresh, hot white rice.
Sprinkle with scallions.
