This "My T Fine" lemon pudding & pie recipe, with a double batch of meringue makes this classic pie a Thanksgiving staple.
1. Prepare 8 or 9 in. pie shell, allow to cool fully.
2. Mix contents of package with 1/2 cup sugar and 1/4 cup water, stir. Stir in 2 egg yolks and 2 cups of water.
3. Cook over medium heat, stirring constantly until mixture comes to a full bubbling boil. Cool 5 minutes, stirring twice.
4. Pour lemon pudding into cooled pie shell.
Prepare meringue:
5. Beat 4 egg whites and 1/2 teaspoon cream of tartar until foamy. Gradually beat in 1/2 cup granulated sugar, beating until soft peaks form.
6. Spread meringue over hot pie filling, sealing well to crust.
7. Bake at 350 for 10-12 minutes or until light brown. Cool to room temperature. Refrigerate 3-4 hours.
