A lower-fat version of Mom's popovers. I didn't grow up eating these but probably should have! If going lighter, should probably also skip eating them with melted butter on the inside too, sigh.
Preheat oven to 450(F).
Place all ingredients in a blender in order listed. Cover and blend on medium speed about 15 seconds, stopping blender to scrape sides if necessary. Blend just until smooth.
Fill muffin cups about 1/2 full.
Bake for 20 minutes. Reduce oven heat to 350(F) and bake 20 minutes longer, until deep golden brown. Remove from pan and serve immediately.
