Best latke recipe ever!
I use the red potatoes, 1/2 of a 5 lb. bag and 1 medium size onion makes enough for about 6-8 people
Peel the potatoes and put through the food processor with the grate blade.
Then put it through again with the puree blade. (The blade that sits at the bottom of the processor)
*Don't pure too long or it turns to liquid mush. Just one or two rotations. The grater makes it stringy and the puree blade makes it smoother.
Add 1/2 cup of flour and 2 eggs, salt and pepper.
Heat oil in a frying pan, enough to generously cover the bottom. I like to test to make sure the oil is hot enough by dropping in just a little bit of the potatoes, if it sizzles it is ready to go.
Fry away!!
