Peel and boil potatoes until they are slightly under done. Drain and let cool.
As the potatoes cool, prepare the hard boiled eggs. The eggs should be cut into cubes approximately 1/2 inch square.
The onion is finely minced.
The olives should be sliced approximately 1/8 inch wide
Dill pickles, these are typical spears (quarters or halfs), the pickles should be firm, and cut into approximately 1/4 inch cubes (bite size).
When the potatoes are cooled, cut into approximately 1/4 to 1/2 inch cubes. The potatoes should be firm.
Combine all ingredients, excluding the Miracle Whip at this time. Fold the ingredients together until well mixed.
Add the Miracle Whip and continue to fold into the Potato salad ingredients until well blended.
Refigerate for 2-4 hours before serving.
Getting the potatoes cooked correctly is perhaps the hardest aspect of this. My mom would use a fork to test the firmness of the potatoes as they cooked. The cooking time varies according to the size of the potatoes used, so this step required some care.
Also, adding 2 tablespoons of the Dill pickle juice/brine adds to the flavor of the potato salad.
