Mom's "famous" crock pot roast. She knows how to draw a crowd!
1. Season roast well with salt and pepper. Pierce the roast in several places and insert a clove of garlic.
2. Place carrots and potatoes in bottom of crock pot. Set roast on top of it.
3. Stir together soups and pour over the roast.
4. Cook on LOW overnight, or HIGH for an hour and LOW for another 4-6 hours.
*****To make gravy (before servng)*****
5. Drain the juice from the roast into a large measuring cup or bowl.
6. In skillet, melt 4 T butter. When it begins to sizzle, stir in 4 T flour.
7. Stir until smooth and slowly pour juice from roast, whisking while you pour.
8. Bring gravy to a slow boil, lower heat and simmer, stirring often, until it's the thickness you like. The best thickness for gravy is for it to just coat the back of a spoon when you put the spoon in the gravy.
9. OPTIONAL: if you want more gravy, stirn in a can of cream of mushroom soup to the gravy.
Mom usually adds a second bag of carrots since everyone wants a plateful. Delicious!
