Suggest a better descriptionIf tomatoes are fresh, cook them down some before adding the spices.
If the tomatoes are frozen, thaw overnight; drain half of the resulting liquid before cooking.
Add spices and cook until somewhat thickened, stirring every 5 minutes to prevent sticking.
When sauce is still somewhat thinner than desired final result, remove the bay leaf.
Add the tomato paste, cheese and sugar.
Return to boiling, stirring constantly as sauce will burn easily at this point.
To can:
Wash jars thoroughly. Place inner lids in a saucepan with a small amount of water & bring to a boil to sterilize.
Ensure that sauce in canner continues to boil, stirring often to prevent sticking or burning. Reduce heat slightly as volume of sauce in canner is depleted.
Fill jars with hot water; empty one, fill with sauce. Wipe rim of jar carefully, place a sterilized lid on it & add a ring, tightening as much as possible. Set aside to cool and seal. Repeat until all sauce is jarred.
Notes: small canner = 64c (13 bags of 5c/ ea); large canner = 96c (19 bags of 5c/ea)
