To start, set out the ingredients that need to come to room temperature -- the eggs and yogurt.
Preheat the oven the 350 degrees. Line a 9 x 4-inch loaf pan with parchment and spray with cooking spray.
In a large bowl, whisk together the flours, cocoa, espresso powder, spices, baking soda and powder, and salt.
In a medium-sized bowl, beat the eggs until they are pale and foamy, about 2 minutes. Mix in the yogurt, buttermilk, and olive oil. Next, mix in the sugar, Splenda, zucchini, chocolate, and vanilla, until everything is well-combined.
Fold the wet ingredients into the dry. Pour into the prepared loaf pan.
The bread will take about 55 - 65 minutes total. Check for doneness with toothpick or cake tester at 45 minutes and cover loosely with foil , if another 5 to 10 minutes is needed. Look for the center to set up and become springy. A toothpick inserted in the center should come out with just a few crumbs attached.
Cool for 10 minutes before removing from the pan. When completely cool, wrap in foil and refrigerate before slicing.
Makes one 9x4-inch loaf (9 1-inch thick slices). Each of 12 servings is 340 calories...OK for a full breakfast with tea or coffee. Cut slice in half to share for 170 calories as a dessert.
