Let rest another 10 minutes and final knead for 5 minutes
Turn out onto lightly floured surface and form into ball
Cover and let rise until doubled (20-60 minutes depending on room temperature)
Divide into 12 equal pieces and form into bagel shape
Cover and let rise for 10-30 minutes
Preheat oven to 450F and bring water bath to boil
Boil bagels for 90 seconds on each side, then set on wire rack to dry
Bake at 450F on cookie sheet with parchment for 15-20 minutes until golden brown
