Suggest a better descriptionTake roast out of the oven 1 hr prior to cooking. Season all sides with kosher salt and pepper. Heat olive oil in large skillet and sear all sides of the roast. Transfer roast to a slow cooker.
In the same skillet, add butter and let foam, then add chopped shallots, salt and pepper. Stir fry for 2 min, add brown sugar, combine and then cover the skillet and let cook on medium heat for 10 min until soft. Reglaze the pan with red wine, and then sprinkle with flour. Add beef broth and bring to a boil, simmer until thickened then pour over the roast. Add bay leaves and cook on low heat for 8 hours. Take roast out and cover with foil to rest, strain the gravy into a pan and if needed, simmer until desired thickness.
