Fresh-baking granola generates one of the most delicious aromas that can come out of an oven. This recipe in particular with its heavy dose of nuts and seeds and a handful of coconut is just about irresistible.
There's a lot of fat in most granola and this one's no exception. On the plus side this recipe is fairly high in iron, calcium and protein. It also has significantly less sugar than most store bought varieties.
Preheat oven to 350 degrees.
Mix dry ingredients (except brown sugar) by hand in a large mixing bowl.
Combine brown sugar, water and honey in a glass measuring cup and heat for 30 seconds to make mixing easier. Add vanilla and mix well. Add oil. It will float on top, but that's OK. It will blend somewhat as you pour.
Pour liquid into dry ingredients and stir to coat evenly. Transfer to a jelly-roll pan or large baking sheet and spread into an even layer.
Place the baking sheet in the oven for 15 minutes. Remove and flip the granola gently with a metal spatula so that the already toasted portion gets buried and the still raw material underneath gets a chance to brown. Return to the oven and bake for another 15 minutes.
Remove baking sheet and let cool for 5 minutes.
While still warm, remove the granola from the sheet to the original metal mixing bowl. This is IMPORTANT since the granola will otherwise adhere to the baking sheet and be very difficult to remove.
After another 5-10 minutes, stir the cooling mixture in the bowl to keep it from clumping into a single large mass.
Once the granola has completely cooled, transfer to an airtight container to keep it fresh.
You can add dried fruit to this recipe, but be sure to add it after it has baked. Otherwise, the fruit will harden into tooth-destroying gravel.
