Combine the flour, sugar, baking soda, cinnamon, and salt. In another bowl combine the carrot, apple, coconut, dates, and pecans. Stir in beaten eggs and vanilla. Add dry ingredients and fold in just until moistened. Fill greased muffin tin 2/3 full. Bake at 375 degrees for 18-20 minutes. Serve with whipped cream cheese.
