Moroccan Lamb Stew
Heat oil in pan, add half the meat and brown then transfer to a plate.
Brown the rest of the meat in the same way and remove from the pan
Heat another bit of oil and fry onion 5 mins
Return meat to pan with garlic, tomatoes, stock, spices, raisins, apricots and black pepper
Bring to boil then simmer for 2 hours till meat is tender
Add carrots 15 mins before end of time, and parsley and coriander before serving.
Cook couscous as normal and serve with stew
