Suggest a better description1. Place the onion, carrots, and celery in a large saucepan and sauté over medium heat for 10 minutes. Add water 1 to 2 tablespoons at a time to keep the vegetables from sticking to the pan. Add the garlic and cook for another minute. Add the paprika, cumin, turmeric, crushed red pepper, lentils, and vegetable stock. Bring the pot to a boil over high heat, reduce the heat to medium and cook, covered, for 45 minutes, or until the lentils are tender. Season with salt and pepper and add the lemon zest and juice. Add the cilantro and spinach and mix until the spinach is wilted (about 5 minutes). Pour the mixture into a 9×13 inch baking dish and set aside.
(Note: make sure you put in the full amount of spinach so it thickens up the mixture)
2. Preheat the oven to 350 degrees.
3. Place the diced yams and cinnamon sticks in the large saucepan and fill with water just until the potatoes are covered. Boil the yams over medium heat until tender, about 15 minutes. Drain water and remove cinnamon sticks. Mash the yams until smooth and creamy, then spoon the mixture over the lentil/spinach mixture, spreading evenly. Bake the casserole for 20 minutes. Turn off the oven and let sit for another 5-10 minutes.
