Preperation1. Chop 2 medium onion, 1 bunch parsley
Eggplant &Potatoes1. Remove 1/2-inch-wide strips of peel lengthwise from eggplants,leaving 1/2 inch peel between the strips. Cut into 1/2-inch rounds, sprinklewith salt, and let stand in a colander under a heavy or weighted plate for 1/2hour. Rinse and dry eggplant rounds.2. Peel the potatoes and slice.3.Preheat broiler. Lightly brush slices with oil on both sides. Place on anungreased cookie sheet and broil until lightly browned. Set aside tocool.
Meat1. Preheat oven to 350 degrees.2. Melt 4 Tb butter in a largesaucepan and saute meat and onion until brown. Add 2 Tb tomato paste, choppedparsley, 1/2 cup chicken stock, salt, pepper, and 1/2 cup water.3. Simmeruntil liquid has been absorbed. Cool. Stir in 1/8 tsp cinnamon, 1/2 cup cheese,and 1/4 cup breadcrumbs.
Sauce1. Warm 4 cups of milk, light beat 3eggs.2. Melt 6 Tb butter in a small saucepan over low heat. Add 8 Tb flour andstir until well blended. Remove from heat, and gradually stir in hot milk.Return to heat and cook, stirring, until sauce is thick and smooth. Add 1 tspsalt, and 1/8 tsp pepper, and 1/8 tsp nutmeg.3. Combine eggs with a little fothe hot sauce, then stir egg mixture into sauce and cook over very low heat for2 minutes, stirring constantly.
Assemble1. Sprinkle bottom of a 10 by 16inch pan with 1/4 cup breadcrumbs. Place a layer of eggplant and potatoes sliceshalf & half on the breadcrumbs, then spread meat mixture over eggplant andpotato slices.2. Cover meat with remaining eggplant slices. Spoon sauce overeggplant; sprinkle with remaining 1/4 cup grated cheese. Bake for 40 minutes, oruntil golden. Cool for 10 minutes before cutting. Serve warm.
