Hacer un almíbar a punto bolita dura (120ºC-124ºC) con el azúcar y el agua. Batir las claras a punto nieve. Poner el almíbar en las claras en forma de hilo y continuar batiendo hasta que el bowl de la batidora se enfríe.
Mousse de chocolate:
Mezclar el merengue italiano de a poco dentro del chocolate derretido. Agregar la crema batida a 3/4 e incorporar de a poco de forma envolvente con el resto de la preparación.
