Suggest a better descriptionPreheat oven to 400F. Heat olive oil in large skillet over med-high heat. Add zucchini and parsley and saute until zucchini is tender, about 5 min. Remove from heat. Place bread slices on large baking sheet. Bake until crisp, about 10 min. Arrange 3 slices mozzarella on each bread slice. Top with zucchini, dividing equally. Sprinkle with anchovies.
