Every year I make this at Christmas time, and every year am asked for the recipe by those new to it, so thought I'd share it with you guys. Very simple to make and delicious :)
Slit the chestnuts and bake or boil them for 20 mins
Remove the shells and skins
Stew the chestnuts until tender in sufficient stock to barely cover them
Rub them through a fine wire sieve (or mum uses potato masher!)
Add the butter, seasoning, flavouring and sugar and sufficient stock to make a soft dough.
And tadaaaaa all ready
Freezes well.
Just thaw out and put in the oven to heat through with a little butter dotted on top before serving.
