Okay, so I'm using the term "Shepherds Pie" loosely (this recipe uses sausage and has no corn, for example). For 2 years I've been meaning to make my husband a shepherds pie--it's one of his favorite dishes--but I'd never made it before. Suddenly on a whim I whipped up this dish yesterday with what I had lying around. Prep time was minimal, and he likes it better than any he's had!
1. Set a pot of water over high heat; add a little salt to make it boil faster.
2. Cut potatoes into large pieces: 4-6 pieces/potato. Do not peel.
3. Put potatoes into the water (it doesn't matter that it's not boiling yet).
(After the water comes to a boil, check the potatoes every 5 minutes by poking with a fork until they are ready for mashing.)
4. While waiting for water to boil, chop up bell peppers into large pieces--about 1" square.
5. Chop onion coarsely.
6. Put sausage/beef into a skillet and add Italian salad dressing mix, peppers and onions.
7. Brown the meat with the peppers and onions.
8. Cover the pan and cook over very low heat the peppers are soft (but not mushy).
9. Preheat oven to 375 degrees.
10. As soon as the potatoes are done, drain them and put back into the pan that you cooked them in.
11. Add butter and mash the potatoes a little.
12. Stir in beef/onion/peppers and mix and mash everything together.
13. Add plenty of salt and pepper to taste.
14. Stir in 3/4 cup of the grated cheddar.
15. Dump the whole mash into a 9 x 12 casserole dish.
16. Sprinkle with the remaining cheese.
17. Bake at 375 for 20 minutes uncovered.
