Excellent flavour. Nice for dipping cooked meats and seafood.
Melt butter. Put wine, vinegar, 1 tbsp. water and onion over love heat and boil gently until 2/3 gone. Mix 3 egg yolks, 1/2 tsp. salt and 1 1/2 tsp. lemon juice, and a pinch of pepper together. Slowly add melted butter, then add wine. Chill to thicken.
