This is a casserole with a rice base, with broccoli and chicken, with a cheese sauce on top.
Cook the rice by boiling 3 cups of water. Once boiling add the rice, turn the heat down, and let it simmer for 20 mins. Once it is done simmering, turn off the heat and let it sit for 20 additional minutes.
Cook the chicken through. A good way top speed this up is to get the pre-cooked rotisserie chickens from the grocery store, and use the meat from them.
Steam the broccoli by boiling water about a 1-1.5 inches of water in a deep pot and then adding the broccoli. let the broccoli steam for around 10 minutes. You can use the steamable broccoli bags, but I have found that fresh broccoli works better in most cases.
Prepare the sauce by mixing the mayonnaise, curry powder, and cream of chicken soup together. The amount of curry powder in the sauce is variable. It all depends on taste.
In a casserole dish, add the rice, then the chicken and broccoli, and then the the sauce on top.
Finally sprinkle generously cheddar cheese on top.
Finally cook at 350 for 30 minutes and it is done.
