1. Coat a large nonstick skillet with cooking spray. Add 1 teaspoon oil and heat over medium heat. Pour in the eggs and cook, without stirring, for 1 to 2 minutes or until the bottom is lightly browned. Cover and cook for 1 minute or until the eggs are set. Transfer to a cutting board. Roll up and slice crosswise into 1/4" wide strips.
2. Season the pork with the salt and pepper. Wipe the skillet clean and coat with cooking spray. Add 1 teaspoon oil and heat over medium-high heat. Cook half the pork, turning once, for 4 to 5 minutes, or until lightly browned. Remove to a plate. Repeat with the remaining pork.
3. Add the remaining 1 teaspoon oil to the pan and heat over medium-high heat. Cook the ginger for 1 minute. Increase the heat to high. Cook and stir the mushrooms for 3 minutes or until lightly browned. Stir in the coleslaw, scallions, vinegar, soy sauce and pork. Cook, stirring occasionally, for 2 to 3 minutes, or until the cabbage has wilted and the pork is cooked through. Stir in the egg strips.
4. Spread the hoisin sauce on the tortillas. Divide the pork mixture among the tortillas. Roll into tubes.
