In a mixing bowl combine four, sugar, baking powder, and salt. Make a well in the center. Combine egg, milk, and butter; add all at once to flour mixture. Stir just till moistened (batter should be lumpy). Line muffin ups with paper bake cups; fill 2/3 full. Bake for 20 minutes.
optional: To make berry muffins, prepare as above, except add berries to muffin mix.
Banana muffins - Prepare as above except decrease milk to 1/2 cup. Add mashed bananas to flour mixture with the egg mixture. Use aluminum bake cups.
