1 Preheat the oven to 190°C, fan 170°C or 370(F) Place paper cases in the tin if not using a silicone mold.
2 Sift the flour, cocoa and baking powder into a bowl, then mix in half the chocolate chunks and all the sugar. Lightly whisk the eggs, oil and milk in a large jug until combined. Pour this into the dry ingredients and mix briefly with a large spoon until everything is just combined.
3 Divide the mixture between the muffin cups; press the remaining chocolate chunks into the top of the muffins. Bake for 25 minutes until well risen. Leave to cool in the tray for a couple minutes then remove and cool on a wire rack.
Lemon and poppy seed :-
Step 2 Use 400g flour and omit the cocoa. Use only 100ml milk; add 2 tbsp poppy seeds and zest and juice of 2 large lemons
Step 3 Half fill the muffin cups with the mixture, add 1 tsp lemon curd to each, then remaining mixture. Swirl a little more lemon curd on the tops before baking.
Step 2 Use 275g flour and omit the cocoa. Add 2 mashed ripe bananas (250g unpeeled weight) 100g chopped and toasted hazelnuts and 100g mini fudge chunks to the mixture. Step 3 Sprinkle with demerera sugar before baking.
Step 2 Use 400g flour and omit the cocoa. Use 175ml coconut milk. Stir in the juice and zest of two limes and 150g chopped mango or pineapple. Step 3 Sprinkle with desiccated coconut before baking.
Pear and almond :-
Step 2 Use 200g flour and 200g ground almonds and omit the cocoa. Use 200ml each of sunflower oil and milk. Add 200g peeled and chopped pear and ½ tsp vanilla extract. Step 3 Sprinkle with flaked almonds before baking.
