Place bread slices in a single layer on two baking pans and freeze until hard.
Preheat oven to 375 degrees.
Meanwhile, pulse bacon in the food processor until finely chopped. Using a rubber spatula, mix cheese, bacon horseradish, onion, salt and pepper together in a bowl until well blended.
Remove bread from freezer and with the spatula, spread each slice with one to two tablespoons of mixture.
Cover pans with waxed paper and return to freezer until firm - about 15 minutes.
Slice crusts off of the bread and cut each slice into four squares. Place on the baking sheet and backe for 20 to 25 minutes, until cheese has melted and toasties are bubbling.
When spreading the mixture on the bread slices, be sure to work quickly. As the bread defrosts and softens, there is a greater chance of tearing the bread.
