Simple Comfort food that is elegant enough for company. The sherry compliments the nutmeg in this dish and gently sweetens it without being to overpowering.
This recipe is adapted from "The Best Beef Stroganoff" recipe posted by sunnyd36 with my own little touches.
If using the bacon, fry in pan until crisp and brown and remove, or heat olive oil in pan. Coat sliced meat in flour and cook until brown. Add onion and cook for 5 minutes until slightly softened. Add garlic and cook until fragrant, about 1 minute. Add water and bouillon and bring to a boil.
Add paprika, salt, pepper and nutmeg. Simmer until meat is tender, approximately an hour. Add mushrooms and sherry and simmer about 10 more minutes. Turn off stove and fold in sour cream and half of the bacon (if using) reserving some for garnish. Let dish reheat gently and spoon over egg noodles. Garnish with fresh parsley and the rest of the bacon.
