Heat olive oil on medium heat, add onions cook 2 mins, add celery, garlic, ginger and curry paste,
Cook and stir 1 min. Add red pepper, cook and stir 1 min. Add remaining ingredients except meat, rice and parsley. Lower heat and simmer 20 mins. Add cooked beef or chicken if using.
Simmer 10 mins. Serve over rice, garnish with chopped parsley.
Freezes well. Add extra curry paste if you like heat.
