Suggest a better description1.) Preheat the oven to 400 degrees
2.) Rinse the beets and place them - still wet - in a baking dish large enough to hold them in an uncrowded layer. Add the oil and turn to coat, and cover the dish. Place in oven and cook until fork-tender - approximately 1 hour. Remove, let cool enough to handle, and while still warm, slip off the skins. Set aside,
3.) To serve, cut the beets lengthwise into halves. Drizzle the warm sauce over the top.
For the Dressing:
1.) Whisk together the cream, mustard, and garlic in a small saucepan and bring to a boil over medium heat. Add the remaining ingredients and continue to whisk until the mixture just comes to a boil.
