Put the dry ingredients into a large mixing bowl; whisk to combine. Add the eggs, milk, syrup and vanilla; uhisk until smooth. Stir in butter, flaxseed oil and cottage cheese. Stir in the chopped nuts, if desired. Let batter rest for 5 minutes.
Preheat your waffle iron. Pour batter, about 2 cups at a time (depending on the size of your waffle maker), onto hot waffle plate. Spread evenly. Close the lid and cook until golden brown.
Serve hot with butter and syrup
