Yum fruit cake my mum always used to make my dad. The only fruit cake I've ever liked
Preheat oven to 180 degrees Celsius
Put fruit mix in a pot and cover with water
Boil fruit in water for 5 minutes or until soft
Once boiled, drain the water
Cut the butter into small cubes and mix into the fruit until all melted
Leave fruit to cool
In another bowl cream the eggs and sugar
Add vanilla and mix again until combined
Once the fruit has cooled mix in with the creamed mixture
Sift flour, baking powder and salt and mix until all combined
Pour cake mix into a lined/ greased 20 cm cake tin and cook in the oven for around 50 minutes or until the centre of the cake springs back when touched
Leave to cool
