Suggest a better description1. Mix all the spices together with melted ghee
2. Place the chicken on a wire rack in a baking dish (breast side down)
3. Brush 1/2 of the mix onto the underside of the chicken
4. Cook at 180C for 30-40 minutes depending on how big the chicken is (roughly half of the total cooking time)
5. Take out of the oven, turn the chicken over and brush with the remaining spice mix
6. Return to the oven for the remainder of cooking time.
7. Take out and place on a plate
8. Boil water, add 1 cup to the baking dish, with a fork whisk until you get the seasoning off the bottom of the pan. Pour into a jug and let it sit so the oil comes to the top, remove as much as you can with a spoon.
9. Add another 1/2 cup boiling water to the jug.
10. Add a small amount of cold water to the cornflour, then whisk into your jug until get your desired thickness
