1. Heat oven 180°C
2. Put dates + bicarb + 1 cup boiling water in heatproof bowl, leave 15mins
3. Beat butter + sugar + vanilla
4. Gradually add beaten eggs
5. Fold in 1/2 sifted flour; then 1/2 date mixture and stir
6. Add remaining flour and date mixture, mix well and combine
7. Bake for 40min
Add brown sugar, cream, butter and vanilla essence. Bring to boil, then simmer for 5mins
