Soak meat in salt water for 24 hrs. Drain. Mix old bay, garlic powder and onion powder. Sprinkle a few pinches of seasoning mix on meat. Combine soy sauce, smoke, and remainder of seasoning mix in medium sized bowl. For a hot batch add 2-4 drops of daves insanity sauce. Put in meat. Make sure marinade covers all meat. Cover and put in fridge for atleast 24 hrs. Stirring every couple hrs. After 24 hrs. Remove meat from marinade and put in dehydrator, or oven at 180 leaving door open a crack to vent, until ready. Times may vary between ovens and dehydrators.
Make sure meat is completely dehydrated.
