Suggest a better description1. Fry the leeks and garlic in some butter for 5 minutes.
2. Add the white wine and bubble until nearly all has evaporated. The wine is to flavour the leeks but ensure you allow it to evaporate or it is overpowering. Save a spoonful of the cooked leeks and set aside- This is used for the base of the sauce later.
3.Stir in the cream, mushrooms, lemon juice and thyme and simmer for a few minutes. Season with salt and pepper and sit to the side ready to put in the pastry. This can be made in the morning the parcels made up at night.
4. Once the filling is well chilled it can be added to the pastry. Lay a sheet of filo on the work surface, brush with butter and lay another on top of the first. Add a mixture to the centre of the pastry and fold the pastry over and under to make a well sealed parcel, brush with some melted butter. Bake for 20 minutes until golden.
5. In a saucepan add the spoonful of leeks and heat. Add 50mls of cream and half a vegetable stock cube mixed in a little water until dissolved.. Cook for a few minutes and season with pepper. If you need to thicken add some cornflour. If you need to thin use a little water.
6. To serve, slice pastry diagonally and serve with the sauce drizzled over the top.
To make vegan substitute cream for soya cream and butter for vegan butter.
