For turkey. I usually make half quantity and omit the bacon.
Melt the butter in a large non-stick fry pan over high heat. Add mushrooms and cook, stirring occasionally for 5 minutes until mushrooms are tender. Transfer mushroom and butter mixture to a large bowl, stir in the raisins and set aside to cool.
Add the bacon to the hot frying pan and cook for 2-3 minutes until light golden. Add to mushrooms with the breadcrumbs, macadamia nuts, green onions and parsley. Season with salt and pepper. Mix well until well combined (stuffing should hold together when squeezed in your hand).
